What are you able to make with some dark chocolate, peanuts and some baking ingredients? You got it! The best vegan chocolate chip cookies ever!
And if you’re really craving something sweet and all the shops are closed, just mix up a batch of these sinfully good treats. Most people have all the ingredients at home for this one. And you’re done in 20 minutes! You don’t even need to wait till they cool down – cause they are even tastier when right out of the oven.
So, to be honest, they are not the healthiest little snack. Especially cause we can’t stop after one or two “little” cookies. No! We go and stuff the whole batch down in one go. Too tempting, watching these bastards on the counter top, winking at us, smelling all good and looking so crunchy. We keep telling ourselfs “Noo!! We’re staying strong! We’ll have another one tomorrow.” HAHA. Not happening!
Ok, enough drooling, let’s get back to business. These cookies are super easy to make. All you need is the following:
- 175g spelt flour
- 1 teaspoon baking powder
- 2 tablespoons peanut butter
- 50g oat milk
- 100g margarine (liquid)
- 150g cane sugar
- 100g vegan dark chocolate (we recommend: Xucker Chocolate Drops)
- 50g salted peanuts
- 1/2 vanilla bean
What to do:
- Just mush up everything
- Bake for 13-15 minutes at 190°C (for all the people with lots and lots of oven-settings: It’s very important you use top and bottom heat and NOT recirculating air.)
